In Jamaica, when you hear the word “jerk” that means two things – hot and spicy! With thousands of South Floridian’s in attendance, the 8th annual Jamaican Jerk Festival was a day and night to remember at Markem Park. The cultural festival once again took place in Sunrise, Florida, where the music was to live for and the food was to die for.

The irie attendees tasted various Jamaican cuisines, from the traditional Jamaican jerk chicken to an nontraditional yet delicious, jerk ice cream. Anything that could be jerked was jerked, and throughout the years, new additions such as jerked lobster, and jerk fish have be incorporated to the “tastiness” of this rich culture. With the captivating aromas that made hearts melt, and soothing reggae music that set the mood; this festival in South Florida is definitely here to stay!

Jamaican jerk seasoning is made with combinations of herbs and spices; thyme, chiles, cinnamon and allspice. If you don’t have these spices in your pantry, Jamaican jerk seasoning is sold in the spice or ethnic section of many South Florida supermarkets.

Jamaican cuisine is very unique and flavorful, bringing various blends of the island’s spices and their amazing harvest. This island’s culture is represented by inhabitants from around the globe, including the British, Dutch, Spanish, East Indian, West African, Portuguese and Chinese. These various nations all brought to the island their own cooking techniques; such as various spices and flavors to blend them with the rich culture and tasty cuisine.

By: Kelly Antoine Hunter

About the Author:

When looking to change your fair food offerings, it can help to know what foods are becoming trendier. While healthy foods are still among the more popular offerings for some people, the truth is that many fairgoers are looking for those unique items that can only be gotten once a year. While fried dough, candy apples, and corn dogs are not disappearing any time soon, here is a look at some of the foods that are certain to be popular in 2010.

Foreign Foods- From tacos stuffed with everything from hamburger to oysters to Greek staples such as spanakopita and baklava, foreign foods are going portable. Expect to see a wide array of foreign dishes at the biggest and best fairs this year, and be prepared for everything from the traditional to the outrageous.

Food on a Stick- While corn dogs, cotton candy, and kebabs are long time staples at carnivals and fairs, expect to see even more food on a stick this year. The simple fact is that people are becoming more and more rushed and more accustomed to instant gratification. This trend will move well beyond the desire for instants checkouts, and you can expect to see a change in traditional fair foods as well. In recent years, it has become commonplace for fairs to offer everything from pickles to fried eggs served on a stick.

Local Food- While there are always a couple of big local restaurants at the average fair, expect to see more mom and pop style businesses this year. From local nonprofits to couples trying to supplement their income by making their own traditional and eclectic snacks and dishes, 2010 is certain to bring a larger number of local and individual food vendors than ever before.

These are only a few of the dishes that are expected to be bigger than ever this fair season. If you are looking for more information on preparing these foods for your booth, websites such as the Food Network page offer recipes and tips to help you create these one of a kind dishes. Whether you are looking to offer your eclectic and delicious foods at one of the many festivals this year or are just reading to learn what you can expect to find at all of the best festivals of 2010, these trends are certain to be cropping up everywhere. With that in mind, get ready to take a walk on the wild side, as there are definitely going to be some new and unique additions to the world of carnival food this year.

By: C Shaver

About the Author:

Viktoria Carella asked:

Have you ever wondered how cheddar cheese curds are made? There are a lot of different steps that go into making this delicious cheese product and if you’ve eaten it you’ll appreciate the time that goes into making the perfect cheese curds. Let’s take the time to take a closer look at how cheddar cheese curds are made.

Making Sure the Ingredients are of Quality

So, there is a very technical process that goes into making cheese curds, and to get the perfect curd, it needs to be followed. First, you have to be sure that you are using quality milk to get the best cheese curds. To get just one pound of cheese you are going to need about ten pounds of milk. For a professional plant that makes cheese and curds, the milk must be tested to be sure that it meets quality and purity standards. Once everything has passed the testing, the milk must be standardized, where it is weighed in and pasteurized so that it is safe and everything it goes into has a uniform product.

Making Them

Once everything has been determined to be safe and uniformed, now it is time to make the cheese curds. To get the cheddar flavor, a starter culture is added to the milk and that will determine what flavor and what texture the curds will have. From there, the coagulant is added which is rennet, which will create custard and is now the first step in making the curds. Once the product begins to firm up, the curds must be separated from the whey and this is done through a process called cutting. Now, the curds and the whey are cooked and stirred with a heat process until the curd gets to the temperature and firmness that is needed to meet standards or fits the requirements of the person that is making them. From there, the whey must be drained off which leaves the curd behind. To get the curd cut into the pieces that people are used to and purchase to eat, it simply needs to be cut up.

Making cheddar cheese curds isn’t as hard as you think, and with the great taste that comes with them, it’s time to either head out to buy a batch. You will be able to appreciate how they were made! Or, you can make your own; but it is really much easier to order them!

Web Hosting

Yap Shirley asked:

Grilled cheese has been a favorite lunch choice for generations, as well as the variations on this straightforward sandwich abound, based on where that you are inside world. Although American or cheddar cheese are the favorite choice for this treat inside the United States, some parts of Europe favor Swiss or Gouda cheese to fill their bread slices. You will find also many additions that can go into a grilled cheese sandwich, like ham, tomato, herbs and spices, or sauces like ketchup or mustard. Some of these will go between the slices of bread just before the grilling takes position, and some are sprinkled within the best or applied as a dip. Many Canadians get pleasure from dipping their sandwiches in ketchup or applesauce, though individuals inside the United States tend to choose their sandwiches with tomato soup or French fries around the facet.

There are several gadgets within the marketplace today that could grill up a lovely sandwich for you to enjoy. Should you do not own one with the specialty grillers nonetheless, a fine old-fashioned cast iron pan which is well seasoned will do. In fact, if you could have a brand new cast iron skillet, a grilled cheese sandwich will be the ideal option for seasoning your new pan. Bread can run the gamut from a hearty wheat to a crusty white, depending on your preference. Texas toast can make a yummy decision, as can a lot of rye breads. The fine news about choosing a bread for your grilled cheese is that as soon as you might have added plenty of butter and melted cheese, practically any bread will fit the bill in a tasty way.

Butter will be the next ingredient for making your sandwich, and might be spread directly onto the bread or melted into the pan. It’s a very good idea not to skimp on the butter, though a well-seasoned pan can add plenty of flavor having a smaller quantity of butter necessary. Your cheese is usually American, Havarti, cheddar, or Swiss, based on your very own tastes and preferences. Location your first piece of bread within the pan using the buttered aspect down, add the cheese of one’s decision, and location the second slice of bread on best on the cheese using the buttered part up. Grill the first side till the bread is nicely toasted, then flip your sandwich and cook the other facet until the cheese inside is melted.

You will discover so many variations for the grilled cheese sandwich these days; your options are only limited by your tastes and imagination. Try tossing in some avocado and tomato, or a slice of ham or bacon. Sprinkle with a dash of oregano, or add some mayonnaise to the bread. Some people love a tuna melt, which adds tuna or tuna salad for the melted cheese inside. Others like to dip their bread slices into beaten eggs just before placing them about the skillet. Whatever your preferences, you are guaranteed to uncover a grilled cheese sandwich that may tantalize your taste buds. Bon a petit!

Web Hosting

First, there is Thanksgiving. Then, there is Christmas from last year. Before you know it, you would have gained at least 5 pounds. What’s worse is that there’s still Mardi Gras celebration to worry about if you failed your New Year’s Resolution weight loss plan. If Mardi Gras cakes and food have been weighing you down every year, it would be best to change your holiday eating habits.

After a slew of holiday feasts, the most important strategy in Mardi Gras is to just maintain weight. It is more likely that you have gained a few pounds by the time Fat Tuesday kicks in. therefore, the primary idea is to stop the weight gain and maintain your weight. This relieves you of all the pressure of losing weight, and enables you to focus on keeping track of your calorie count. Controlling how much and how often you eat are also critical points when faced with the tasty temptations of Mardi Gras cakes. It is recommended that you eat six small meals a day, with a total calorie intake equivalent to three full meals. Eating often leads to an improvement in metabolism. Better metabolism enables your body to burn fat and calories continuously, thus preventing any drastic weight gain. Before the celebrations, you can take a small meal so you avoid eating too much during the gathering. During the banquet itself, make it easier on yourself by staying as far away from the buffet table as possible. It is best to survey the table once, choose the healthy items and enjoy the cuisine at a distance. Being far away from the buffet table prevents you from giving in to the temptation of sweet treats, high-fat foods and alcoholic drinks. These three have been labeled as major causes of weight gain, especially on holidays. To make sure that you have a healthy option come Mardi Gras, you can host the party yourself. By cooking for your family and friends, you can maintain your healthy eating habits and encourage others to develop them as well. If organizing a party is not your strong suit, you can just bring a healthy dish to your friends’ parties. This serves the same purpose and makes sure that you have at least one healthy food option come dinner time.

Your healthy eating should continue even after the celebrations and parties are over. Once the Holiday fever has subsided, you should remove all remnants of the holiday season from your fridge and replace them with healthy food choices. These include a stockpile on fruits and vegetables, lean meat and bottled water. To curb weight gain during Mardi Gras and all its precedent holidays, you can set your mind to a diet and workout program. There are programs out there with infusions of supplementary medicine, diet program and workout routines that target specific fitness goals, such as losing fat or gaining muscle. A great research on your part is required to find them.

Mardi Gras may be called Fat Tuesday, but it does not give you the license to lose control over your body. Healthy eating should always be a part of your lifestyle all year round, especially during holidays like Mardi Gras where the temptation to binge and overeat reaches its peak.

By: James Wayne

About the Author:

Any visit to a distant and unfamiliar destination can be even more exciting when you find yourself in the middle of a city in celebration and bursting with energy. One such location is the Philippines’ own province of Cebu, where a vibrant crowd celebrates a wide array fiestas all year, making each event the ideal time to visit and experience unforgettable festivities.

Celebrated every 3rd Sunday of January, the Sinulog Festival is Cebu’s grandest and most notable festival. Honoring the holy image of Senyor Santo Nino de Cebu, Cebuanos come together along public roads in an impressive and solemn procession that also include a joyous mardi gras parade.

Every 7th of May, history is celebrated in Mandaue City with the Mantawi Festival. Featuring the city’s historical heritage, revelry can be found on the roads across the city with floats, food and trade fairs, street dancing, and sporting events.

Another is the Kadaungan sa Mactan in Lapu Lapu City. Held every 27th of April, this includes a spectacular one-day re-enactment commemorating the historic battle of Mactan, where the forces of Philippine hero Lapu-Lapu fought with those of Ferdinand Magellan.

In Talisay City, locals and tourists alike look forward to the Inasal Festival. Honoring the city’s patron saint, Sta. Teresa de Avila, the people of Talisay dance on the streets with great merriment as a thanksgiving offering to their patron saint every October 14 to 15.This also includes a mouth-watering food festival highlighted by roasted pigs referred to as “inasal” or lechon.

Every December, the entire province comes alive in lights and sound as Paskuhan is celebrated. A Christmas celebration overflowing with songs, Christmas carols, lantern- making activities, and much more, spreading the holiday cheer all across the entire province.

With all the festivals and holidays the province joyfully observes, Cebu can draw quite a crowd and booking accommodations can either be difficult or pricey. If you’re ideal visit involves being in the middle of all the action wanting to have stylish but comfortable accommodation to wind down to, there are several budget and boutique hotels in Mandaue, Cebu you may want to try. One such hotel is Europa Mansionette Inn, where the hotel’s latest promo includes discounted rates on accommodations all year round.

By: Kara Ochoa

About the Author:

With gas and airline prices soaring, Americans are looking for more affordable ways to enjoy spontaneous day trips, weekend getaways, and longer vacations without sacrificing the fun. What’s a food-lover to do? Consider a food-festival vacation. You can stay close to home or venture to new destinations-there are plenty of food festivals to choose from all across the country. So if you enjoy travel, outdoor activities, or good food, satisfy your inner travel bug and palate at the same time by attending a food festival.

What better way for residents to show pride in our heritage, our towns, and the fruit of our fields or the catch of our rivers and oceans, than to host a food festival? These festivals have always been a means of uniting communities through celebrations of harvests and giving thanks for a plentiful growing season. They can be traced back thousands of years to celebrating the arrival of harvest time, the autumnal equinox, and the honoring of earth gods.

Combining the excitement of celebrations with the fresh taste of local foods, food festivals continue those traditions today-typically honoring a crop grown or food harvested in the region. Commonly featured foods include seafood, fruits, vegetables, chili, and barbecue while some events highlight more unusual local specialties. Regardless, there’s a festival for every taste.

Food festivals are ideal entertainment for the whole family. Besides the main attraction-delicious food-these festivals feature a variety of amusements. Live musical entertainment is common, eating contests are popular, and off-beat competitions are always a favorite. Like fairs or carnivals, food festivals often feature children’s activities and exciting midways with their flashing lights, daredevil rides, and games of chance.

Pageants are often highlighted by the crowning of the festival queen. Small or elaborate parades create fun for all ages with imaginative floats and marching bands. Races burn off calories-or build an appetite. Evenings are crowned with firework shows. Slower-paced attendees can meander through arts and craft booths, farmers markets, or displays of antique cars, fire engines, or farm equipment. For those strictly there for the food, many festivals hold recipe competitions or cookoffs.

Many festivals have a small-town character, while others have gained nationwide recognition. Festival length varies-from one-day affairs to a week or more.

While most food festivals are free or charge a nominal admission fee, and many offer free samples, some are ticketed events for admission and/or the food. Depending on the location, there may be a parking charge. Since fees change frequently, make sure to contact the festivals ahead of time so there are no surprises. Keep in mind that many festival proceeds go to charity, which may make swallowing the cost more palatable.

Typically you go from booth to booth (pay as you go) and sample different foods or recipes of the same food. But other festivals have whole meals for purchase or are sit-down meals. Festivals may feature a particular raw ingredient (like strawberries or tomatoes) while others involve preparing dishes on-site (like chili or barbecue). Or if you crave variety, “Taste Of” events typically feature the signature dishes of local restaurants.

More and more people are planning their travels around food-related events, and every state boasts many delicious destinations for celebrating its regional specialties. So gather your family and friends and savor the fresh taste of local fare while enjoying the great outdoors – without breaking the bank!

By: Joan Steinbacher

About the Author:

The Ludlow food festival bears its roots in a brief yet truly interesting history. Each year the festival has gone from strength to strength in the eyes of the public thanks to the festivals many, varied events.

Back in the mid nineties, the people of Ludlow felt in great need of some way to promote its food produce. The foods were well known in the local area but they wanted them to become known to the larger public. So Ludlow put on a test festival just to see how things would go. This test proved far more successful than any of the people of Ludlow could have imagined. Needless to say the festival has ran yearly ever since.

The yearly food festival is put on at the castle square of Ludlow. It receives much help from the town’s volunteers and food producers. Due to the huge success of the festival, many great chefs have put their talents into the event too.

Every season the event is put on, you will find the return such events as: the Pork Pie of the Marches, the Sausage Trail, and the Cake Trail among many other great events. Enough to truly bring in the crowds.

As the years go by, there is a continuing increase in visitors to the festival. And visitors which amounted to over 10,000 finally reached 20,000 in 2007, and continue to grow to this day.

It is best to have a look at the dates on the official website before taking a trip to Ludlow since the dates change slightly every year.

By: John H Marsh

About the Author:
